Mexican Chicken Casserole ($1.67 per person)

This recipe is SUPER easy and SUPER good! All of the kids loved this one. We came across this recipe early in our marriage and it got filed away (otherwise lost) in our "recipe folder". So we decided to dig it back out and give it another whirl. Why we let this one get lost for so long, is beyond me! Anyway, here goes:

Ingredients to buy:
1 (10 3/4-ounce) can cream of chicken soup - $1.32
1 (10 3/4-ounce) can cheddar cheese soup - $1.32
1 (10 3/4-ounce) can cream of mushroom soup - $1.22
1 (10 ounce) can of ro-tel - $.88
1 whole rotisserie chicken (boned and chopped) - $4.98
1 (11 1/2-ounce) package flour tortillas - $1.78
2 cups of shredded cheddar cheese - $1.86

Pantry items:
cooking spray

1. Preheat oven to 350 degrees.
2. Spray 13 x 9 pan with cooking spray.
3. In large bowl, stir together the 3 soups and ro-tel.
4. Stir in chicken.
5. Layer the tortillas and the chicken mixture in the pan, beginning and ending with tortillas.
6. Sprinkle the cheese over the casserole and bake for 30 minutes!

That easy!!!

Total cost for the meal is $13.36 ($1.67 per person) and there will be NO leftovers! :)
