Workin' Mom's Ham and Beans (I thought this title was a little catchy :))

Stephen and I both work fulltime jobs and now Stephen no longer works from the house. So we have been trying to find "quick" and/or "easy" meals because after working all day, the last thing we want to do is spend hours in the kitchen :) So, crock pot meals are always exciting to us :) So here is one we kinda made up with the use of combining a few different recipes we found on the internet and adding our own kick to make this AWESOME pot of ham and beans with cornbread!

Ingredients to buy:
Ham (small part with bone-in, we bought one and used only 1/3 for the ham and beans and used the rest for hot ham and cheese sandwiches twice) - $13.92 for whole ham so for this dinner it cost $4.64

Great Value Navy Beans (1lb) - $1.28

3 pkgs of Jiffy Cornbread mix - $.42 x 3 = $1.26

Ingredients that most already have on hand ("pantry items"):
1 cup of milk and 3 eggs for the cornbread
Garlic minced (2 heaping tablespoons) or powder
2 chopped onions
8 cups of water
1 teaspoon of cumin powder
2 tablespoons of honey
salt and pepper

1. Soak beans overnight
2. In the morning place beans, ham (all in one piece with the bone), garlic, onions, cumin, honey, water, salt and pepper in the crock pot and set the crock pot on HIGH.
3. During lunch hour, granted you get to go home at lunch, take the ham out and cut into pieces off the bone and add more water if needed and turn to LOW.
4. After work, make cornbread as directed.
5. Place cornbread in bottom of bowl, spoon in some beans and ENJOY!

EVERYONE of our kids enjoyed these! This says alot because 2 of the kids don't even like beans!

The cost of this meal was (not counting the "pantry items") $7.18 (less than $1.00 per person)
